PROYECTO CARIBE FOOD EXPERIENCES
Not having a permanent space has not stopped the exciting foodie experience, Proyecto Caribe from being named a New Worlder's Best New Restaurant of 2017 The passionate undertaking by two of Latin America's most innovative and exceptionally talented chefs, Jaime Rodriguez and Sebastián Pinzón, Proyecto Caribe is more than just a visually stunning pop-up comunal dining experience that delights and surprises tastebuds, it is also an important investigation into Colombian ingredients and food traditions that have been overlooked for too long and are in danger of being lost forever. The result is one of those truly special experiences where you feel you are witnessing future chef's table genius in the making.
Let us know if you are interested in reserving one of the limited spots in their intimate pop-up dinners (usually Thursday nights, fortnightly.. we will confirm once you've let us know you are interested) or perhaps consider creating your own private dining experience in residence for your group or special occasion.
But get in while you still can. In 2018, Proyecto Caribe will move into a permanent workshop with a 30-seat restaurant and space for classes and research.
UPDATE: Proyecto Caribe now has their own full-time restaurant called Celele. It's located in Getsemani in Calle Espiritu Santos and it's AMAZING and now top of our most recommended restaurants. Make a booking direct:

RUM TASTING
The most treasured booty for any good pirate during those seafaring days of the Caribbean wasn't a treasure chest of gold, but a good bottle of rum. Today this caramel coloured plonk continues to keep the locals crazy and rum, or ron as it is called in español, is the national liquor of Colombia.
We have teamed up with Cartagena's best mixologists to offer a special rum tasting experiences. It's a great activity for bachelor groups, curious couples, foodies, drinkies, or anyone who is looking for an activity that gets them out of that hot sun!
The rum tasting (here it's called a "cata", I still don't know why) will talk you through the ingredients, distillery process and creation and brief history of the glorious spirit, then the 5 special rums will be introduced and contrasted and, importantly, drunk! The standard tasting focuses on Colombian Rums, but special tastings that include Caribbean rums can also be provided.
This is an extremely popular experience. Your host is an absolute gun in all things booze with seemingly infinite knowledge that he's passionate about sharing with his guests. Even if you're not a big drinker, everyone leaves this tasting with increased appreciation for the fascinating history and context of Rum.
You can make a reservation by sending an email to us at [email protected]
